Ingredients

  • 1 whole chicken, cut into pieces
  • 2 quarts of water
  • 1 onion, chopped
  • 3 stalks of celery, chopped
  • 3 carrots, chopped
  • 2 teaspoons of salt
  • 1/2 teaspoon of black pepper
  • 1 bay leaf
  • 2 cups of all-purpose flour
  • 1 teaspoon of salt
  • 2 eggs
  • 1/4 cup of milk

Instructions

  1. In a large pot, combine the chicken, water, onion, celery, carrots, salt, pepper, and bay leaf. Bring to a boil; reduce heat and simmer for 1 hour or until chicken is cooked through.

  2. Remove the chicken from the pot and let it cool. Shred the chicken and set it aside.

  3. In a mixing bowl, combine the flour, 1 teaspoon of salt, eggs, and milk. Mix until a dough forms.

  4. Roll out the dough on a floured surface to about 1/8 inch thickness. Cut the dough into noodle shapes.

  5. Add the noodles to the pot with the vegetables and broth. Simmer for 10-12 minutes or until noodles are cooked through.

  6. Add the shredded chicken back to the pot and warm through.

  7. Serve hot.
