Planet Hollywood’s Cap’n
2 1/2 c. Cap'n Crunch cereal, coarsely crushed.
1/2 c. cornflour
1/2 c. milk
1 c. flour
1/2 tsp. salt
1/2 tsp pepper
2 lbs. boneless chicken tenders or chicken breasts cut
into tenders. Washed and patted dry
1). Place cereal in a freezer type bag, seal it and bash it anyway you can to resemble coarse
2). In a medium bowl, combine the bashed cereal with cornmeal and set aside.
3). In another medium bowl, beat together egg and milk and set aside.
4). In another medium bowl, mix together flour, salt and pepper.
5). Set up your dipping station in this order: flour mixture, egg mixture and then cereal mixture.
6). Dredge chicken tender in flour and shake off excess. Dip in the egg mixture and place in
cereal crumbs. Coat chicken thoroughly on both sides with the cereal and place on non-stick
foil-line baking sheet. Repeat with the rest of your chicken.
7). Bake at 375 for 30-35 minutes, flipping the last 10 minutes of cooking.
8). Remove from oven and let set 3-5 minutes to crisp.
9). Server and dip in spicy mustard sauce if desired
Spicy Honey Mustard Sauce
2 T Spicy Brown Mustard
4 T Honey
1 - 2 T milk
